Valentine Salmon Loaf

Make Loaf:

  • 1 lb. can of salmon, drained
  • 2 cups soft bread crumbs (white bread or hot dog buns)
  • 1 small onion, minced
  • 1 Tablespoon melted butter
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 slightly beaten egg

Grease a large cookie sheet.

Combine all ingredients in a large bowl. Pour onto cookie sheet and shape into a heart. May also use a heart-shaped baking pan or casserole instead.

Bake at 350 for 35-40 minutes.

While loaf bakes, make white sauce:

  • 2 Tablespoons chopped green onion
  • 3 Tablespoons butter
  • 2 Tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • dash of freshly
  • ground pepper
  • 1 1/4 cups milk
  • 1 teaspoon Worcestershire Sauce

Sauté chopped green onion and butter in a large saucepan until onions are transparent. Blend in flour, salt, and dash of pepper. Add milk and Worcestershire sauce. Cook, whisking constantly until sauce thickens and bubbles.

Pour sauce over baked loaf and serve.
